After an overview on Europe and, in particular, Piemonte chocolate industries, our study focuses on an analysis of one of the most important Piemonte chocolate producers, Caffarel in the period between 1900 and 1978.Our research detects the features in organizational models, administration, and accounting systems at Caffarel. Through an analysis of the innovations and changes in the habits and customs over time, our analysis offers some reflections on this company’s ability to excel in this sector. The conclusion shows that its success was mainly due to entrepreneurial spirit and an ability to adapt to environmental and social changes
