Within the labour market, the evaluation of candidates' attributes and attitudes by recruiters during the recruitment process plays a fundamental role today. For this reason, many contributions within statistical literature focus on the relationship between the hiring process of a candidate and the set of skills required for the job position. These individual skills, therefore, play a decisive role in determining the competitiveness of companies and workers, representing a significant part of compensation, replacing traditional remuneration parameters. In this context, the presented study is the result of a collaboration with the Adecco Group aimed at defining a dynamic relationship between professional roles and the skills required to identify new trends existing in the recruitment process. This work specifically pertains to the tourism and restaurant sectors within the Italian labour market. The matching between professional requirements and candidate skills was examined using dynamic factor analysis. This methodology is particularly effective in the case of multi-way data, where the three dimensions considered are professional roles, required soft skills, and years of observation. Through the implementation of this technique, it is possible to highlight the professional trajectory of selected roles and the presence of emerging new skills.
