This paper proposes two possible extensions of the Mariani-Mussini coefficient for the economic valuation. This index measures economic variations using utility scores and relative importances carried out from Conjoint Analysis. Actually, it results particularly sensible to the variation of number of the attributes. Two possible approaches are proposed here as a solution for this issue. The first approach suggests a model comparison deleting an attribute one at a time. The second approach recommends the use of an adjusted multiplicative factor to the original coefficient. In particular, these extensions are tested on a case study about the Italian dry-cured ham. The experiment has been realized using a survey involving 43 customers
